Bull City Burger and Brewery and Pompieri Pizza take a farm tour each year, and learned recently that pork ribs and small "cull" sweet potatoes were underutilized and going to waste. So, they decided to create a festival celebrating the food that doesn't usually make it to our plates.
This year they're focused fully on ribs and sweets. They'll be serving six flavors of pork ribs and 2 versions of tofu ribs for vegan/vegetarian friends. They'll have sweet potatoes four ways, sweet potato desserts, and sweet potato beer, plus, veggie sides.
